Homemade Marshmallows

Delicious, puffy pillows of sugary goodness! :)

 To make these you need

12 sheets of gelatine (husblas)

2×120 ml glucose syrup

450 g sugar

120 ml water

1 tsp vanilla powder or vanilla sugar

½ tsp salt

 

Soak the gelatine in 3 shifts of cold water.

Pour 120 ml glucose syrup into the bowl of a stand mixer, fitted with a whisk attachment, and set on ‘low’.

Melt the soaked gelatine (in the microwave or over a double boiler), and pour into the mixer, continue to whisp on low.

Combine sugar, water and remaining 120 ml of glucose in a saucepan, and boil until the sugar reaches 115 degrees Celsius, then pour into the mixer. Now increase the speed to medium/high and beat for 7 minutes, before adding the vanilla and the salt. Then beat an additional 1-5 minutes on highest settings, until peaks of the mixture hold their shape.

Pour/spread the mixture in a greased dish, and let set for several hours (6 or so). dust with powdered sugar, and slice with a greased knife or pizzacutter, and coat the pieces in powdered sugar.
