Dulce de Leche Ice Cream

So, it has been more than a month since my last post. I’ve missed you :(  When I last blogged here, my boyfriend had just defended his master’s thesis and I had just finished my exam. Somehow more than a month has gone by, taking my holiday with it… Oh, I am still on holiday from the university, but working full time, so it does not feel like time off. The time not blogging has been spent with work, family visits, a trip to Malta (which you can read about here) and now more work. I have been baking a bit, but without amazing outcomes…

This ice cream, however, is amazing! It uses Dulce de Leche, a caramel made from condensed milk. I use the store bought kind, but feel free to make your own, there are lots of recipes on the internet, one by Ms. Humble can be found here.

Now, to the recipe!

300 g Dulce de leche

375 ml whole milk

50 g light muscovado sugar

250 ml double cream

 

Mix dulce de leche, milk and sugar in a pan, and heat until dissolved. Chill, and then add the cold cream, and pour into an ice cream maker (or freeze the ice cream in  the way you usually make ice cream) and churn, then pour into a container and put in the fridge. Enjoy!!
