Lemon Cake

250 g butter

200 g sugar

zest of 1 organic lemon

juice of one lemon

3 eggs

300 g flour

1 tsp baking powder

1 tsp baking soda

Cream the butter and sugar, until fluffy. Add the eggs one at the time and add the dry ingredients and lemon zest and juice.
Pour the batter into a mould (a loaf pan works perfectly well), and sprinkle with sugar.
Bake for 1 hour or so, at 170 degrees celcius, until a skewer comes out clean.
The batter can be coloured, as in the picture above.
