Oat Biscuits!

Hello. Are you still out there? It seems like life insists on getting in the way of my blogging. Anywho, lots to do ;)

26th of April will bring the 3rd year anniversary of this little blog! Any idea as to how it should be celebrated? Recipes, pretty cakes, giveaways or a blog make-over? all ideas are most welcome! :)

While you think, I’ll talk about biscuits :) I like HobNobs, and found a recipe for homemade HobNobs on Cookie Madness, but it seems to be gone from her site now.

However, here is my converted version of homemade HobNobs!

120 g oats

50 g flour

½ tsp baking powder

½ tsp baking soda

50 g Brown sugar

2 tbsp. sugar

130 g butter

½ tbsp glucose syrup

½ tsp vanilla sugar

Optionally, chocolate to cover the biscuits

Blend the oats, and add the other dry ingredients. Then Work in the butter, until the mixture resembles crumbs, then Work the dough together with the glucose, and place between two sheets of parchment. In this way you can roll it out to about 6 mm, and cut out with a glass or a circle cutter. Bake the biscuits for 12 minutes (until just golden at the edges) at 180 degrees Celsius.

Let the biscuits cool on a rack, and cover in chocolate if you like :)
