Cookies with Pistachio og White Chocolate

24. december at last! Merry Christmas, and one of my very favourite recipes for you!

This recipe is adapted from Nigella Lawson, How To Be A Domestic Goddess

100 g butter

125 g sugar

100 g brown sugar (preferably muscovado)

1 tbsp. vanilla sugar

1 egg

150 g flour

1 tsp. baking soda

100 g ground pistachio nuts

125 g whole pistachio nuts

125 g choppes white chokolate

Cream together the to sugars and the butter. Add the egg, and then flour, ground pistachios, vanilla and baking soda. Fold in the whole nuts and the chopped chocolate.

Make balls the size of walnuts, and bake at 180 degrees Celsius for 10-12 minutes, until golden.

Yields about 35.

These cookies are nothing short of amazing!
