This is a birthday cake very suited for patterned moulds.
250 g flour
1½ tsp baking powder
½ tsk baking soda
a pinch of salt
2 dl buttermilk
1½ tsp vanillasugar
125 g butter
200 g sugar
Mix flour, baking soda, baking powder, vanilla sugar and salt.
Beat butter and sugar until fluffy, add the eggs alternately. Add the buttermilk and the dry ingredients alternately, and mix thouroughly.
Pour into buttered mould, and bake at 180 degrees celcius for 30 minutes to an hour (depending on the size of the mould), a cake skewer should come out clean.
Let the cake cool of in the mould, turn out and let cool completely.
Split the cake, and fill with mousse, ganache or whatever.
for chocolate, add 2-3 tbsp. cocoa to the flour.
