The August 2011 Daring Bakers’ Challenge was hosted by Lisa of Parsley, Sage, Desserts and Line Drive and Mandy of What the Fruitcake?!. These two sugar mavens challenged us to make sinfully delicious candies!
The second part of the Daring Bakers Challenge was to make a candy, where the chocolate was optional. I went for caramel.
Now, if you are looking for a soft, chewy caramel, that melts in your mouth… keep looking. (and, if you find it, please tell me!)
This is a crisp caramel, but quite delicious nonetheless.
2,5 dl double cream
125 g sugar
60 g glucose syrup
Mix the ingredients in a large pot (I recommend 3 l, as the mixture will boil heavily), and heat over medium heat, stirring occassionaly, until the mixture thickens, turns golden, and reaches 130 degrees. Pour into a heatproof bowl, lined with parchment, and leave to cool a couple of hours. Once cool, smash into pieces, eat and watch out for your teeth ;)
